My Mum whipped this up this afternoon to prepare for the day-after-Christmas hunger. You know when you overeat one day, the next you're a little extra hungry because your stomach grew. Neatloaf definitely hits the spot.

2 cups cooked brown rice
1 cup walnuts, finely chopped
1 onion, finely chopped
1/2 green capsicum
2 carrots, grated
1 cup wheat germ
1 cup quick oats
1/2 tsp thyme
1/2 tp majoram
1/2 tsp sage
2 tbs tamari
2 tbs dijon mustard
tomato sauce (see below)

Preheat the oven to 180˚ C
Combine all the ingredients except for the tomato sauce, mixing with a large spoon to bind them together
Grease a loaf pan and put a thin layer of tomato sauce on the top
Bake for one hour
Let stand for 5-10 minutes before serving

Makes 5-8 servings (depending on the tummies at the table)
