This is the most amazing soup for a chilly evening after a long day. It's full of vitamin C and lycopene- a protective anti-oxidant that is linked to the prevention of cancer and known to decrease the aging of the skin. Serve with a side salad and naan bread, garlic bread or cheesy toast.
Ingredients
3 tbs olive oil
1 red onion, chopped
4 cloves garlic, chopped
10 large tomatoes, chopped
6-8 basil leaves, chopped
1 lt. vegetable stock
1 cup milk
salt and pepper to taste
Directions
Heat the oil in the pot and add the onion and garlic, saute for 2-3 minutes
Add the tomatoes and basil and cook until the tomatoes begin to soften (4-5 minutes)
Add vegetable stock and simmer for 30 minutes
Remove from heat and let cool slightly
Pour into food processor and blend
Pour through a sieve back into the pot and add milk, salt and pepper, reheat
Ladle into bowls.
The stars in the bowl are pastry puff cut with cookie cutters, nrushed with milk, topped with sesame seeds and baked in the oven at 200˚C until golden.

Looks great! I always have trouble cooking with tomatoes, do you remove the skin or seeds before you make this soup? I am guessing not, but you puree & sieve it to get rid of them at the end. Hmmm, will give that a go! Maybe I just use the wrong type of tomatoes... next year I am going to grow alot more varieties!
