scones with jam and cream

When I want to feel a little
less I-haven't-had-a-shower-in-three-days-and-my-my-tracksuit-is-my-staple-outfit and a little more regal, scones are the perfect homemade accompaniment to a cup of steaming hot tea.

3 cups of flour
1 1/2 tbs baking powder
1 tsp salt
80 grams (2/3 cup) organic butter, cubed
1 - 1/4 cups of whole organic milk

Preheat oven to 200˚ C and line a baking tray with baking paper or just dust lightly with flour
Add the flour to a bowl and using your fingertips rub the butter into the flour until the mixture has the consistency of breadcrumbs
Make a well in the center of the mixture and add the milk, mixing with a flat spoon until a soft dough forms (add more milk if you need to)
Place the dough on a floured surface and knead until smooth (not too much or the scones will be too dense)
Pat or roll the dough out to 2cm thick and then cut into rounds (this should make around 12-15 medium sized scones)
Place them on the baking tray and sprinkle with flour
Bake for 20-25 minutes until golden
Let them cool a bit before serving with jam and cream and a hot cup of tea

Aren't scones great?! We've been having pumpkin and date scones to use up leftover pumpkin. Yum!

Scones, jam, cream... life is good! I found a recipe for Lemonade Scones that are SOOOOO easy (no butter rubbing and they work every time!) and beyond scrummy. I posted the recipe on my blog a little while ago...

Sigh, it's 9.22pm and now I'm craving scones. Not good!

OMG... looks incredible. But I wonder, is there technically a difference between a scone and what we Americans call biscuits? The recipe seems almost identical...
