chocolate beetroot cake


2-3 small beetroot bulbs peeled

1/4 cup cocoa powder

1/4 cup hot water

1 cup brown sugar

2 eggs

1/2 cup whole milk

1/4 cup sunflower oil

1 tsp vanilla essence

1 cup spelt flour

1/2 cup white flour

1 tbs baking powder

2 tsp salt


Preheat oven to 180°C and grease a oaf pan

Finely grate the beetroot

Mix cocoa and hot water in a bowl, add the sugar and egg and beat with spoon until smooth.

Add the beetroot, milk, oil and vanilla essence

Mix the dry ingredients together in a bowl, then fold into the wet ingredients

Pour into the pan and bake for 55-60 minutes

Let cool before cutting

I love chocolate beetroot cake. It's one of my favourites. My recipe is a little different so I might just use yours next time and see if at tastes different.

We've just dug up some beetroot ~ my girls will love making this choc-veg cake. Nothing like a bit of inventiveness! It looks delicious!
