THE RECIPE
Greek Quinoa Salad
Ingredients
1 cup quinoa
1 1/2 cups cold water
1/2 tsp salt
handful of basil, roughly chopped
handful of pitted and sliced kalamata olives
handful of cherry tomatoes, quartered
1/2 block of feta cheese, cubed
1/2 cup fresh, shelled peas, blanched
1 carrot thinly sliced and halved
1 sm. cucumber sliced and halved
dressing-
1/8 cup olive oil
1/8 cup red wine vinegar
crushed or grated garlic clove
1 tbs dijon mustard
tsp salt
tsp pepper
Directions
Rinse quinoa and bring to boil and then put heat on low and cover for 15 mintues, remove from heat and then let it sit for 5 more minutes with the lid on.
Chill in the fridge.
Add the rest of the ingredients to the quinoa and incorporate, mix the dressing ingredients together and pour over salad to taste. For more on the benefits of quinoa, see this past post.
