coconut, pineapple and mint icy poles (popsicles)


Ingredients

1 can organic coconut milk
3 cups pineapple juice
roughly chopped mint leaves

Mix together in a large jar/container and shake, pour into moulds and freeze.
Enjoy!

They look so yummy. I bought some of those icy pole moulds from Tupperware ages ago and still haven't used them. With my 2 year old now starting to ask for ice-cream, these would be a fantastic idea. I'm always inspired by your wonderful ideas, thanks!

Just wondering if you could tell me what moulds you use and where you can get them from. A few years back I tried to track down some stainless steel moulds but to no avail. At the moment I use the tupperware ones as they are freindly plastic (I think).
