Ingredients
2 cups cooked lentils
1 red onion, finely diced
handful of thyme and oregano from the garden
olive oil
dash of balsamic vinegar
Directions
Fry the onions in the pan until soft, add the lentils and then spices and fry everything together for a few minutes until warm and soft.
This can be served as a side dish or a main. It is delicious accompanied with foccacia or pita, tzatziki, hummus and a greek salad. The very simple flavours are what makes it so delicious. Hope you all have a splendid week.

I love anything lentil. Can't wait to try this one. What type of lentils work best? I'm partial to red lentils, but they usually turn to mush when I cook them....
