After completing the 30 days vegan workshop, I have still been eating a mainly plant-based foods. I don' want to make it an official announcement yet. But I am still really into this clean and green diet.
Here is a delicious vegan cake I made the other day:
vegan maple berry cake
Ingredients
1 cup spelt flour
1 cup whole wheat flour
1 tsp bi carb soda
2 tsp baking powder
1/2 tsp salt
1/2 tsp salt
1 tsp cardamon
1 tsp ground cloves
2 tsp cinnamon
1/3 cup coconut (or sunflower) oil
1/3 cup coconut (or sunflower) oil
1/4 cup soy or almond milk
2/3 cup maple syrup
3 mashed overripe bananas
1/2 cup chopped nuts
2/3 cup maple syrup
3 mashed overripe bananas
1/2 cup chopped nuts
1 tbs poppy seeds
3/4 cup berries
3/4 cup berries
Directions
Combine dry ingredients
Combine wet ingredients in a separate bowl
Mix both together*** (if the batter seems too dry add a bit more almond or soy milk or if too wet add a touch more flour- sorry I made this up on the day and I am guesstimating how much of each I put in)
Add nuts, seeds and berries at the end
Pour batter into a greased or lined bread pan (or muffin tray for muffins) and bake at 190˚C for 25-35 minutes until golden on the top and you can stick a toothpick through it and it comes out clean.

Oh my, this is delicious. I have just discovered coconut oil and I'm in love. It makes baked goods taste amazing.
yummo. I think I might make this tonight for a little playdate we have tomorrow am. No bananas though as currently too expensive. Might try with preserved pears instead?
