Simple Dahl with Coconut Rice
Add chilli if your kids can tolerate it. This is a huge hit with little ones- even our 9-month-old begs for more.
- Ingredients
1 cup red lentils, rinsed
1 inch piece fresh ginger, diced
olive oil
1/2 red onion, finely chopped
2 garlic cloves, crushed
2 tsp turmeric
1 tsp cumin
1 tsp ground coriander
1/2 tsp garam masala
juice from one lime
1/2-1 tsp salt
3/4 cup coconut cream
2 1/4 cups water
cooked basmati rice soaked in 1/4 cup coconut cream
Directions
Saute the ginger, red onion and garlic in a generous amount of olive oil
Add the spices until fragrant
Add remaining ingredients, bring to a boil, turn down and simmer for 30 minutes until lentils are soft
Serve on rice, garnish with cashews and coriander

You would love Cafe Gratitude here, they have a cookbook too you would probably really love! Unfortunately for us, our little one is allergic to nuts so we can't go there with him because they use so many nuts in their vegan food. Oh well!
Hi Meagan, Looks great. I have a red lentil dahl recipe that our whole family (kids and baby included) loves too. But I'll try yours out as a variation. (Let me know if you want to try mine, it's delicious!!!) Just wondering about the "cooked basmati rice soaked in coconut cream". Do you soak the rice in the coconut cream before cooking, or stir it through after the rice has cooked? Thanks, R
It's just cooked and then I put the leftover coconut cream from dinner into the pot and cover the li so the rice soaks it up. xx would love to try your recipe! x
Thanks Meagan. That coconut rice sounds yummy. I ended up making your dahl without waiting for your reply so just made normal rice. It was well received, thank you! Yum. Here's the link to the dahl I usually make, nice to try out different variations. The rice she makes here is delicious too. This makes a huge pot, I usually make half, or if I make the full recipe I freeze half of it. Good to have something tasty in the freezer though! x
