egg-free/dairy-free banana bread

Perfect with a hot cup of tea on these very wet Sydney days.

1 cup whole wheat flour
1 cup whole spelt flour
1/2 cup brown sugar
1/2 cup maple syrup
1 tsp bi-carb
2 tsp baking powder
1 tsp salt
1 tsp cinnamon
1/2 cup soy milk
4 ripe bananas
1/4 cup coconut oil
1 tsp vanilla

dairy-free chocolate chips

Combine dry ingredients
Combine wet ingredients
Add wet to dry and mix, then add walnuts
Pour into a greased/lined baking pan or muffin tin
Top with chocolate chips
Bake in 180˚C oven for 25-30 minutes for a loaf or 15-20 minutes for muffins
Ready when you can remove a toothpick clean

I made banana bread last night - had it for breakfast this morning all lovely and little chocolate chunks for me, tho I did have to resist the urge to throw them in the mix!
