vegetarian rice paper rolls

Easy, simple, quick and healthy. 
Love it.


Ingredients
Rice Paper Wraps
Rice Noodles
Sliced Carrots
Sliced Cucumber
Diced Green Onions
Crumbled or Cubed Soft Silken Tofu with Tamari (Soy Sauce) and Sesame Seeds
Peanut or Sweet and Sour Sauce


Directions
Boil 3 L hot water
Pour into two large bowls
Soak the noodles in one bowl
Soak on paper in another bowl for a few seconds
Remove and put toppings of choice on top of wrap
Roll on each side to seal, and then roll up
Dip in sauce

Yum, I love these and make them allll the time. I love them best with satay dipping sauce and tons of avocado :)
