And you know what?
It's so simple, I'm embarrassed to say I ever tried it any other way.
Ingredients
2 cups quinoa (or brown rice or cous cous)
3 3/4 + 1/8 cups of water (7/8ths) (just under 4) (are you following?)
1 tbs olive oil or butter or coconut butter
desired spices
Directions
Put the quinoa and water into a pot and bring to a boil
Let it boil uncovered until water is just covering the grain - reduced
Turn the heat off completely
Cover, add oil of your choice and spices and let sit for 15 - 20 minutes
Remove lid and fluff.
Quinoa, brown rice and cous cous are all perfect for the freezer. Simply remove and let it defrost on the counter or dump it back into a saucepan or pot, add a bit of water, defrost and serve. I had no idea you didnt need to keep cooking the Quinoa, so just like cus cus. Surly that dosnt work for brown rice too???? I feel like it takes so long to cook brown rice. Maybe a pre soak would help, ive never tried before??
hmm, i'm intrigued... i'm used to doubling the amount of water but i'll definitely give your method a shot!
looks good. I must say for cous cous I just put one cup of cous cous in a stone bowl and then add one cup of boiling water and a knob of butter and some cardomom pods and a bit of lemon peel and then cover with a plate. Leave for a few minutes, check and adda drop or two of boiling water and stir and leave again for a few minutes if needed but then serve. Don't cook at all. Have you tried this? Literally dinner in minutes!! (well with the addtion of some veg!)

I've ended up here after looking at your quinoa burger recipe as I've never cooked quinoa before.
My maths brain suggests that this calculation is still wrong...

Doesn't 2 3/4c + 1/8c = 2 7/8c, i.e. just under 3 not just under 4?
Could you please clarify?

Thank you AGAIN. Gosh, where was my head this day!?! In Mars apparently. Yes, just under 4 is the right amount so I have changed the numbers again!! xx
