grain-free apple coconut cake

5 eggs, beaten
1/2 cup maple syrup
1/2 cup coconut oil, melted
dash of vanilla
1/2 cup coconut flour
1/2 tsp bi-carb
1/2 tsp baking powder
dash of salt
2 peeled and cored apples, chopped into small pieces

Mix the dry ingredients together, set aside
Beat the eggs, then add the rest of the wet ingredients and then fold in the dry ingredients mixing as minimally as possible (you want it smooth but you don't want to lose that beautiful lightness you created by beating the eggs).
Pour into a greased and/or lined pan (this makes quite a small thin cake- you can double it easily if you like)
Place sliced apples on top and lightly press into the batter

Bake at 180˚C for around 20-30 minutes (Sorry, I am no good at timing my baking, I go on gut instinct)
Remove from oven when you do a pick test and the pick comes out clean
Let it cool before removing from the pan

Ice with proper vanilla frosting or for a simpler version just sprinkle with a bit of cane sugar or top with whipped cream.

It sounds delicious Meagan. I've never tried coconut flour before but I've noticed you've used it in a few of your yummy recipes so I might just have to buy some and give it a try. I wanted to tell you we still love those lime choc chip biscuits you wrote about a while ago and I started using coconut oil in them instead of olive oil and they are delicious, thank you:) x

Hi Megan, thanks for the recipe! I have tried using coconut flour a few times now but each time the cake comes out quite crumbly and heavy. Have you got any tips? Thanks x

Grounded living: lots of eggs and oil. I out about 6 eggs per 1/2 - 3/4 cup of coconut flour. Plus lots of oil. Good luck! X
