grain-free, sugar-free blueberry muffins


Ingredients6 organic eggs
5 TBS butter5 TBS whole milk 3 TBS honey3 TBS maple syrupdash of vanilla dash of cinnamon1/2 cup coconut flour1/2 tsp baking powder1/2 cup frozen organic blueberries


DirectionsMix wet ingredients together (first 6)Add dry ingredients
Pour into greased muffin pan
Add a few blueberries to the top of each muffin
Bake for 20-25 minutes at 200˚C until just golden and cooked through the middle

Makes 12.

These look good! I reckon my son would love them - and I love that they aren't loaded with sugar! Do you reckon they'd work with regular flour? Blueberries are back in season now where I live, I've been wondering how to use them up while they're around!
